Pumpkin Oatmeal Breakfast Cookies

Putting a pumpkin twist on a favorite cookie! These savory cookies are great for breakfast or a healthy snack. Versatile where you can add your fave dried fruit and seeds. I went with dried cranberries, chia seeds, pumpkin seeds, and raisins.

The spices really bring out the flavors of Fall in these cookies. Of course pumpkin spice along with ground ginger and nutmeg to round out the spices.

Bonus is that your house will smell amazing while these are baking in the oven. I find myself eating these pre/post workouts too. They are a great energy source with the complex carbs from the oats (my go-to brand here) and pumpkin. If you can, heat them up a bit before eating for a warming touch. Otherwise, you enjoy them right from the fridge!

Pumpkin Oatmeal Cookies
Savory pumpkin spice oatmeal cookie – great breakfast treat or snack!
Course: Snack Servings: 12

Ingredients:
1 1/2 cups Old Fashioned Rolled Oats
1/4 cup hemp seeds
1 tbsp chia seeds
1 tbsp pumpkin seeds
1 tbsp dried cranberries
1 tbsp raisins
2 tbsp pumpkin spice
1 tsp ground ginger
1 tsp nutmeg
1/2 tsp salt
2 tsp baking powder
3/4 cup pumpkin puree
2 eggs
1/2 cup almond milk
3 tbsp maple syrup or honey
1 tbsp peanut butter
2 tsp vanilla extract

Instructions:
Preheat oven to 350F
Grease a baking sheet
Whisk together pumpkin puree, eggs, almond milk, peanut butter, maple syrup or honey, and vanilla. Then fold in dry ingredients. From Oats to baking powder.
Combine well and scoop into even mounds on the baking sheet. Should make about 12-14 cookies depending on size.
Bake for 10-12 minutes until edges start to brown. Let cool completely before storing. Enjoy them warm out of the oven!
